Oil oxidation is an important factor affecting the quality of edible oil, which is also called fatty acid rancidity. After the fat is decomposed, free fatty acids are generated, and they are divided into "saturated VS unsaturated fatty acids". Unsaturated fatty acids are more likely to be slowly oxidized under the action of light, oxygen, etc., and generate hydroperoxides. Then hydroperoxides are cracked into low-molecular-weight aldehydes, ketones, acids and other products with savory flavors. This process is called oxidative rancidity of fats.
In addition, the reasons for the accelerated oxidation rate of oil mainly include the following factors:
1. The oxidation rate of high unsaturated fatty acid content is accelerated.
2. The higher the free fatty acid content, the faster the oxidation rate of oil.
3. The contact area between grease and air or oxygen is large, the oxidation rate of grease is accelerated.
4. The oxidation rate of grease increases as the temperature increases.
5. Irradiation of visible light, invisible light, etc. will lead to accelerated oil oxidation rate.
6. Excessive moisture content causes the hydrolysis and rancidity of the oil, which leads to oxidation.
7. Oxygen-promoting metal ions, lipoxidase, etc. are easy to cause the oxidation of oil.

Specifically, impurities such as phospholipids, free fatty acids and pigments in crude oil can be removed with a refinery through processes such as degumming, deacidification, decolorization and deodorization. It can significantly improve the quality of oil, prolong its storage time and reduce oil oxidative rancidity due to impurities.
